Green Chile Palooza: New Mexican comfort and tradition

Green chile is largely celebrated in New Mexico and is a part of its traditional cuisine. August marks the beginning of green chile season, when many take to stocking up and freezing chile to last them into the next year.
Been to H-E-B lately? Green chile is in everything, it seems, except how New Mexicans like me feel like it should be: Whole and roasted. Adding it to cuisine comes later, not sooner.
This being said, I tried a few of the items H-E-B has to offer. They taste good, but not like home.
Many of these items the real flavor of the green chiles seem lost to other spices like jalapenos. But to each his own!
The recipes I’ve largely made with green chile are those that enhance the green chile flavor. The other ingredients may be a little bland, but the chile does what it should: It steals the show.
Here are a couple recipes that I’ve made in my day, perfect for fall.
