“This isn’t your ham and pineapple pizza,” Mark Jakobsen tells two shaggy teenagers as they read the menu posted on the brightly colored food trailer.
Jakobsen is the owner and chef of the Big Kahuna food trailer at The Hitch food trailer park. He and is wife, Lori, serve authentic Hawaiian food with an Asian twist.
Born in Tokyo, raised in Maui, Hawaii, Jakobsen was introduced to the kitchen and the world of food at a young age.
“I didn’t have a choice, I had to get into it. When I was nine my mother married a chef from Copenhagen, Denmark…He’d bring me to his restaurants and use me as a free dishwasher,” he said.
