New menu at Roughhouse Brewing

Roughhouse Brewing, a family-run farmhouse brewery located in the Hill Country just south of Wimberley, is partnering with Three Six General (TSG) to debut a new food menu focused on local farms and providers starting Feb. 20.

The new menu will feature TSG’s popular slow-roasted whole hog sandwich, among others, all served on bread sourced from Sour Duck Market in Austin. Seasonal salads, hearty soups and snacks will also be available, showcasing Texas produce, herbs, cheeses, proteins and butter.

Mattison Bills, the former owner of Mum Foods, recently started TSG, with business partner Denny Dinsmore, which they run out of San Marcos. Bills helped to create what Texas Monthly deemed the state’s best pastrami under the Mum Foods brand. TSG currently sells its wares at farmers markets in Austin and San Antonio starting soon. Roughhouse Brewing will be TSG’s first fully-curated menu for a separate entity.

The partnership marks a shared vision by both companies to shine the spotlight on local and Texas makers — something Roughhouse is already conscious of doing with its beer program. The brewery currently sources all of its raw grain from Barton Springs Mill in Dripping Springs, uses native yeast cultured from the property to ferment its beer, and is starting a cave-aged beer program later this year using all Texas ingredients.
