Texas State Dining, powered by Chartwells Higher Education, opened a cinnamon roll pop-up from midnight to 2 a.m. during exam week, Dec. 8–11.
The dining team anticipated the need for additional space for study, group work and projects due to increased fall enrollment. Let’s Roll, located at Woods St. Pizza in the Jones Dining Center, became a popular late-night spot. The pop-up sold more than 200 rolls and generated more than $1,000 in sales on opening night.
Through Thursday, Dec. 11, it had sold more than 800 rolls and had more than $6,000 in sales. Flavors include s’mores, maple bacon, strawberry shortcake, blueberry, banana flambé and Texas barbecue brisket.
“We knew there was a need for a late-night option for both studying and food during finals week,” Senior Director of Marketing and Guest Experience Whitney Villarreal said. “Our oncampus culinary team presented us something new, fun and a product that paired perfectly with coffee and hot chocolate.”
The Texas State Dining team plans more popups in the spring semester while finding a way to incorporate Let’s Roll into a retail space at the Jones Dining Center.
